  1. Peel and slice the peaches to measure 10 cups.
  2. Place the sliced peaches in a large saucepan.
  3. Add the sugar and bring the mixture to a boil, stirring until the sugar is fully dissolved.
  4. Working in batches, pour the hot mixture into a blender or food processor and puree until smooth.
  5. Allow the puree to cool to lukewarm temperature.
  6. Line baking sheets or jelly-roll pans with plastic wrap, ensuring a smooth surface.
  7. Pour the peach puree onto the prepared surfaces and spread it into an even layer approximately 1/8-inch thick.
  8. If drying outdoors, cover with a screen to protect from insects and place in full sunlight.
  9. If drying indoors, place pans in an oven set to 150ðF with the door slightly ajar.
  10. Dry for 20 to 24 hours, or until the puree can be easily peeled off the plastic without sticking.
  11. Once dry, peel the fruit leather off the plastic wrap.
  12. Roll up the fruit leather tightly around the plastic wrap for storage.
  13. Wrap securely in additional plastic wrap and seal tightly.
  14. Tear or cut into strips to serve.
