This homemade peach leather is a delightful, natural treat that captures the essence of fresh summer peaches. By reducing ripe fruit and sugar into a smooth puree and dehydrating it slowly, you create a flexible, chewy sheet of concentrated fruit flavor. It is an excellent alternative to store-bought fruit roll-ups, offering a cleaner ingredient list and superior taste. The texture is soft yet durable, making it easy to roll up and pack for picnics, school lunches, or hiking trips. This recipe is naturally vegan and dairy-free. While traditional methods use sunlight, using your oven provides a more controlled environment for consistent results. Enjoy it on its own or as a topping for yogurt and ice cream.

Peel and slice the peaches until you have 10 cups of fruit.
-
Place the sliced peaches in a large saucepan.
-
Add the sugar and bring the mixture to a boil, stirring constantly until the sugar is completely dissolved.
-
Working in batches, transfer the hot peach mixture to a blender or food processor and puree until smooth.
-
Allow the puree to cool until it is lukewarm.
-
Line baking sheets or jelly-roll pans with plastic wrap or parchment paper.
-
Pour the peach puree onto the lined sheets and spread it into a thin, even layer approximately 1/8 inch thick.
-
Preheat your oven to 150&# 194;°F (65ðC).
-
Place the sheets in the oven and prop the door open slightly to allow moisture to escape.
-
Dehydrate for 20 to 24 hours, rotating the sheets halfway through, until the leather is dry and peels easily from the surface.

Note
Storage: Roll the fruit leather up with plastic wrap, wrap tightly in another layer of plastic, and seal. It will keep at room temperature for about 1 month, in the refrigerator for about 4 months, or in the freezer for up to 1 year.
Variations: You can substitute other in-season fresh fruits such as strawberries, plums, apricots, or pears. Compatible combinations of fruits may also be used instead of a single fruit.
Tip: If drying in sunlight outdoors, cover with a screen to avoid insects and bring inside at the end of the day to finish drying the second day.
