  3. Stir in 3 cups of the sifted flour and beat until the batter is smooth and thick.
  4. Cover the bowl tightly and let the batter rise in a warm place until doubled in volume, about 1 to 1 1/2 hours.
  5. Add the softened butter, remaining sugar, salt, egg yolks, cardamom, and another 3 cups of flour to the risen batter.
  6. Mix thoroughly until a shaggy dough forms and all ingredients are incorporated.
  7. Turn the dough out onto a lightly floured surface (using the remaining flour as needed) and knead for 8-10 minutes until smooth, elastic, and slightly tacky but not sticky.

  9. Let the dough rise in a warm place until doubled in size, about 1 to 1 1/2 hours.
