  2. Add vegetable oil, crushed pineapple, drained and vanilla extract.
  3. Beat well.
  4. Add flour, ground cinnamon, salt and baking soda, all sifted together.
  5. Add grated carrots and chopped nuts.
  6. Bake in loaf pans @ 325 degrees for 60 minutes or until wooden pick inserted in center comes out clean
