  1. Preheat oven to 325F (165C). Grease a 9-inch springform pan.
  2. In a small bowl, combine graham cracker crumbs, 3 tablespoons sugar, and melted margarine until mixture resembles wet sand.
  3. Press the crumb mixture firmly onto the bottom of the prepared pan.
  4. Bake the crust for 10 minutes, then remove from oven and set aside.
  5. In a large bowl, beat 20 ounces of softened cream cheese with 1/2 cup granulated sugar and 1/4 cup flour until smooth and well blended.
  6. Add eggs one at a time, beating well after each addition, then mix in 1/4 cup orange juice.
  7. Stir in the remaining 1/4 cup flour, shredded carrots, raisins, nutmeg, and ginger until evenly distributed.
  8. Pour the filling over the baked crust.
  9. Increase oven temperature to 450F (230C) and bake for 10 minutes.
  10. Reduce oven temperature to 250F (120C) and continue baking for 55 minutes, or until the center is almost set.
  11. Turn off oven and let cheesecake cool in the oven with door slightly ajar for 1 hour.
  12. Loosen the cake from the rim of the pan and cool completely on a wire rack.
  13. For the glaze, beat the remaining cream cheese with 1 tablespoon orange juice until smooth.
  14. Gradually add powdered sugar, mixing until thick and creamy.
  15. Spread the glaze evenly over the top of the chilled cheesecake.
  16. Garnish with additional raisins and shredded carrots if desired, then chill until ready to serve.
