Description

These Cashew Truffles are a decadent homemade treat that combines the smooth richness of melted semisweet chocolate with the satisfying crunch of toasted cashews. The center is a luscious ganache-like mixture made with heavy cream and butter, offering a luxurious texture that melts in your mouth. Rolled into bite-sized balls and dipped in a glossy chocolate shell, these truffles are elegant enough for special occasions yet simple enough for a weekend baking project. They make wonderful gifts for chocolate lovers or a sophisticated addition to your holiday cookie platter. Ingredients

Directions

  1. Finely chop 3 tablespoons of cashews and set aside.
  2. Place 6 ounces of semisweet chocolate in a heavy 2-quart saucepan over low heat.
  3. Stir constantly until the chocolate is completely melted and smooth.
  4. Remove the saucepan from the heat.
  5. Stir in 2 tablespoons of margarine or butter until fully incorporated.
  6. Add 1/4 cup of whipping cream and the chopped cashews, stirring well to combine.
  7. Refrigerate the mixture for 10 to 15 minutes, stirring frequently, until it thickens enough to hold its shape.
  8. Drop the mixture by teaspoonfuls onto a cookie sheet lined with aluminum foil.
  9. Roll each portion between your palms to form smooth balls. If the mixture is too sticky, refrigerate briefly to firm up.
  10. Freeze the truffle balls for 30 minutes to harden them.
  11. While truffles freeze, melt 1 cup of chocolate chips and 1 tablespoon of shortening in a small saucepan over very low heat.
  12. Stir constantly until the chocolate is melted and the mixture is smooth and glossy. Remove from heat.
  13. Dip each frozen truffle into the melted chocolate, ensuring it is fully coated.
  14. Place the dipped truffles back onto the foil-lined cookie sheet.
  15. Immediately sprinkle some truffles with additional finely chopped nuts if desired.
  16. Refrigerate the truffles for about 10 minutes, or until the chocolate coating is set.
  17. For a decorative touch, drizzle some truffles with a mixture of 1/4 cup powdered sugar and 1/2 teaspoon milk.
  18. Refrigerate again briefly until the drizzle is set.
  19. Serve at room temperature for the best flavor and texture.
  20. Store leftover truffles in an airtight container in the refrigerator.
