Ingredients

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Break the cauliflower into florets and place them in a pot of boiling salted water.
  3. Peel and quarter the potatoes, then add them to the same pot of boiling water.
  4. Cook both vegetables for about 15-20 minutes, or until they are fork-tender.
  5. Drain the vegetables thoroughly in a colander and allow them to steam dry for a minute.
  6. Transfer the hot cauliflower and potatoes to a large mixing bowl.
  7. Add the butter, salt, pepper, and cayenne pepper to the bowl.
  8. Mash the vegetables together using a potato masher until you achieve a smooth, consistent puree.
  9. Beat the eggs lightly in a small bowl, then mix them into the vegetable puree one at a time.
  10. Stir in about 2 tablespoons of the grated Gruyère cheese, reserving the rest for topping.
  11. Grease a baking dish and spoon the mixture into it, spreading it out evenly.
  12. Cover the dish tightly with aluminum foil.
  13. Bake in the preheated oven for 45 to 50 minutes.
  14. Remove the foil and sprinkle the remaining cheese over the top.
  15. Place under the broiler for 2-3 minutes until the cheese is bubbly and golden brown.
  16. Let stand for 5 minutes before serving.
