  1. Dissolve the yeast in 1 cup of warm water and let stand for 5 minutes until foamy.
  2. Combine 2 1/2 cups of flour, salt, and anise seeds in a large mixing bowl.
  3. Gradually add the dissolved yeast mixture and 2 tablespoons of olive oil to the dry ingredients, mixing until a soft dough forms.
  4. Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic, adding more flour if necessary.
  5. Spread the raisins over the working surface and knead the dough over them until all raisins are incorporated.
  6. Shape the dough into a ball, place in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm place for 1 hour or until doubled in size.
  7. Punch down the dough and flatten it out on a floured surface to about 1/2 inch thickness.
  8. Let the flattened dough rest, uncovered, for 15 minutes.

  10. Heat 1 cup of olive oil (or other frying oil) in a deep saucepan to 350&# 194;°F (175°C).
  11. Fry the diamond-shaped fritters a few at a time, turning once, until golden brown on both sides.
  12. Transfer the fried fritters to a plate lined with paper towels to drain excess oil.
  13. In a small saucepan, combine 1 1/2 cups of honey and 2 tablespoons of lemon juice.
  14. Bring the honey mixture to a boil and simmer for just 3 minutes.
