  1. diced 3/4 c Finely shredded green -cabbage 4 sl Bacon, chopped 1 ts Fenugreek 1/2 ts Ground coriander 4 Eggs, beaten 1 tb Cold water Salt to taste Fresh ground pepper to taste 1/2 c Grated Cheddar cheese Red bell pepper strips (opt) Fresh Italian parsley -sprigs (opt)
  2. Heat oil and butter in a medium-size flameproof skillet.
  3. Add onion, garlic, bell pepper, cabbage and bacon and
  4. fry over low
  5. heat 5 minutes, stirring occasionally.
  6. Add fenugreek and coriander and stir well.
  7. Preheat broiler.
  8. Whisk eggs with cold water, salt and pepper and pour into skillet.
  9. Swirl skillet to ensure an even coating.
  10. Cook over low heat 3-4 minutes or until mixture is golden brown underneath.
  11. Sprinkle with cheese and
  12. place under preheated broiler and
  13. cook until mixture is
  14. set on top and cheese has melted.
  15. Cut in 4 wedges, garnish with bell pepper strips and parsley sprigs, if desired, and serve hot
