  1. Preheat the oven to 200°C (400°F).
  2. Heat sunflower oil in a large frying pan over medium heat.
  3. Add streaky bacon and cook for 3-4 minutes until crisp.
  4. Remove bacon with a slotted spoon and drain on paper towels.
  5. Melt 2 oz butter in the same pan over medium heat.
  6. Add 1 finely chopped large onion and cook until soft and translucent, about 5 minutes.
  7. Transfer the onion and butter mixture to a large mixing bowl.
  8. Add 12 oz fresh white breadcrumbs, chopped bacon, 9 oz finely chopped tinned chestnuts, 3 tbsp fresh thyme leaves, zest and juice of 1 lemon, 2 medium eggs, and 8 oz premium pork sausage meat.
  9. Mix all ingredients thoroughly until well combined.
  10. Season generously with salt and black pepper to taste.
  11. If stuffing a turkey, fill the cavity with the mixture. Alternatively, transfer the mixture to a baking dish.
  12. Bake for 20-25 minutes, or until the top is golden brown and the stuffing is cooked through.
  13. Let rest for 5 minutes before serving.
