  1. Season chicken pieces with salt and cayenne pepper.
  2. Heat oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.
  3. Brown the chicken pieces on all sides until golden, then set aside.
  4. Add sliced andouille sausage to the pot and saut until lightly browned.
  5. Remove sausage from the pot and set aside with the chicken.
  6. Reduce heat to medium and add equal parts oil and flour to the pot to make a roux.
  7. Cook roux, stirring constantly, until it reaches a dark chestnut color (be careful not to burn).
  8. Stir in chopped onions, celery, green pepper, and garlic.
  9. Saut vegetables, stirring frequently, until tender and fragrant.
  10. Return chicken and sausage to the pot.
  11. Gradually pour in chicken stock while stirring constantly to prevent lumps.
  12. Bring the mixture to a boil, then reduce heat to low.
  13. Cover and simmer gently for at least one hour, or until chicken is tender.
  14. Season with additional salt and cayenne to taste.
  15. About 10 minutes before serving, stir in chopped green onions.
