Line a 9-by-5-inch loaf pan with aluminum foil, leaving overhang on the sides for easy removal; grease the foil.

In a large bowl or food processor, combine chicken, brandy, olive oil, garlic, 3/4 teaspoon salt, and white pepper. Process or mix until smooth and creamy.

Fold in the chopped sun-dried tomatoes, pimiento, fresh parsley, fresh basil, and goat cheese.
