  1. Bone and skin the chicken breast, then cut it into 1-inch cubes.
  2. In a bowl, mix sherry, light soy sauce, anise pepper, and chopped scallion.
  3. Pour the marinade over the chicken cubes and let them marinate for 30 minutes.
  4. In a separate small bowl, beat the egg white with 2 tablespoons of cornstarch until smooth.
  5. Toss the marinated chicken in the egg white mixture to coat evenly.
