Ingredients

Directions

  1. Cut 3/4 lb boneless, skinless chicken breasts into bite-sized strips and season with 2 teaspoons of Cajun Magic Poultry seasoning.
  2. Bring a pot of salted water to a boil and cook the pasta according to package directions until al dente.
  3. Drain the pasta, rinse briefly with hot water to remove excess starch, then rinse with cold water to stop cooking; drain well.
  4. Toss the drained pasta with a small amount of oil to prevent sticking while you prepare the sauce.
  5. Heat a large skillet over high heat for about 4 minutes until very hot.
  6. Add the seasoned chicken strips to the skillet and brown for about 2 minutes on the first side, then 1 minute on the other.
  7. Add 3 cups of fresh sliced mushrooms to the skillet and cook for 2 minutes until they begin to soften.
  8. Stir in 1/4 cup minced green onion tops, 1 teaspoon minced garlic, and 1 cup chicken stock (or water).
  9. Bring the sauce to a rapid boil and cook for 2 minutes to reduce slightly.
  10. Reduce heat to medium and add the remaining butter (cut into pats), stirring and shaking the pan constantly to emulsify the sauce.
  11. Cook for 3 minutes until the sauce is glossy and slightly thickened.
  12. Add the cooked pasta to the skillet and toss vigorously to coat evenly with the chicken and sauce.
  13. Serve immediately while hot.
