  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place each chicken breast half between two sheets of plastic wrap or waxed paper. Gently pound with a rolling pin or meat mallet until about 1/4 inch thick.
  3. In a small bowl, combine salt, dried oregano, pepper, and minced garlic. Sprinkle this mixture evenly over the flattened chicken breasts.
  4. Shape the guava paste into four thin strips, approximately 2 x 1/2 x 1/2 inches. Place one strip onto each slice of cooked ham.
  5. Top each guava strip with about a tablespoon of finely chopped fresh cilantro.
  6. Fold the ham slice around the guava and cilantro to enclose the filling.
  7. Place one ham roll at the narrow end of each chicken breast. Roll the chicken up tightly around the filling in a jelly-roll fashion. Secure each roll with toothpicks.
  8. Heat oil in a skillet over medium heat. Add the chicken rolls seam-side down and cook covered for about 6 minutes, turning once, until no longer pink inside.
  9. Remove toothpicks from the chicken rolls. Place them on paper towels to pat dry.
  10. Separate the crescent dinner roll dough into 4 rectangles. Firmly press the perforations to seal the dough.
  11. Place one chicken roll onto each dough rectangle. Fold the dough over the chicken, pressing the edges firmly to seal. Place seam-side down on an ungreased cookie sheet.
  12. Cut a few slits in the top of the dough to allow steam to escape during baking.
  13. Bake for 13 to 18 minutes, or until the dough is golden brown.
  14. Meanwhile, prepare the sauce: In a small saucepan over low heat, combine guava paste, dry sherry, chopped cilantro, and beef bouillon.
  15. Stir constantly until the guava paste melts and the sauce thickens slightly.
  16. Place the baked chicken bundles on serving plates. Spoon the warm guava sauce over each bundle.
  17. Garnish with additional fresh cilantro if desired and serve immediately.
