Ingredients

Directions

  1. Cut the sweet Italian sausage into 2 1/2 inch long pieces.
  2. In a heavy skillet or Dutch oven, cook the sausage pieces, turning until browned on all sides. Remove to a large Dutch oven or baking dish.
  3. Sprinkle the chicken pieces with salt and pepper to taste.
  4. Wipe out the skillet, add olive oil, and heat over medium-high heat. Brown the chicken on both sides.
  5. Transfer the browned chicken to the Dutch oven with the sausage.
  6. In a separate saucepan, add chopped celery and enough water to cover. Bring to a boil, then lower heat and simmer for about 5 minutes until crisp-tender. Drain, reserving the cooking liquid.
  7. In the same skillet used for chicken, add chopped onions and sliced mushrooms. Cook, stirring, until wilted and softened.
  8. Stir in the anchovy fillets, sliced black olives, and capers.
  9. Add the drained celery to the skillet and stir to combine with the vegetable mixture.
  10. Pour in the white wine and tomato sauce. Simmer for 10 minutes to allow flavors to meld.
  11. Pour the sauce evenly over the chicken and sausage in the Dutch oven.
  12. Season with additional salt and pepper if needed. Cover the Dutch oven and simmer on the stovetop or bake in a 350ðF (177ðC) oven for 30 minutes, or until chicken is tender and cooked through.
  13. If the chicken begins to dry out during cooking, add a little of the reserved celery cooking liquid and a bit more tomato sauce.
