Ingredients

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked rice, ground walnuts, beaten egg, 1/2 cup of the shredded Swiss cheese, and 1/4 cup grated Parmesan cheese. Mix well.
  3. Press the rice mixture evenly over the bottom and up the sides (about 1/2 inch) of a greased 14-inch pizza pan to form a crust.
  4. Bake the rice crust for 10 minutes. Remove from oven and set aside to cool slightly.
  5. Add bite-sized chicken pieces, chopped onion, green and red peppers, sliced mushrooms, and olives to the skillet.
  6. Cook and stir for about 7 minutes, or until chicken is tender and no longer pink. Drain off any excess liquid.
  7. Spread pizza sauce evenly over the cooled rice crust.
  8. Layer the remaining 1 cup of Swiss cheese over the sauce, followed by the chicken and vegetable mixture.
  9. Sprinkle with fresh basil and crushed oregano.
  10. Top with shredded mozzarella cheese and the remaining 1/4 cup of Parmesan cheese.
  11. Bake for 15 to 20 minutes, or until the cheese is melted and bubbly and the crust is golden.
  12. Let cool slightly before slicing and serving.
