  9. In a medium saucepan, whisk together all-purpose flour and skim milk until smooth.
  10. Stir in dry sherry, salt, ground red pepper, and thyme.
  11. Cook over medium heat, stirring constantly with a wire whisk, until the sauce thickens and bubbles, about 5 minutes.
  12. Remove sauce from heat and reserve 1 cup for the top layer; set aside.
  13. In a mixing bowl, combine ricotta cheese, Swiss cheese, and 1 cup of the grated mozzarella cheese.
  14. Spread the reserved 1 cup of sauce evenly over the bottom of a 13x9-inch baking dish.
  15. Arrange 4 pieces of lasagne noodles over the sauce, breaking or overlapping as needed to fit.
  16. Spread half of the ricotta cheese mixture over the noodles.
  17. Layer with half of the cooked chicken and half of the sautéed vegetables.
  18. Spread half of the remaining white sauce over the vegetables.
  19. Repeat the layers: 4 noodles, remaining cheese mixture, remaining chicken/vegetables, and remaining sauce.
  20. Top with the final 4 pieces of lasagne noodles.
  21. Spread the reserved 1 cup of sauce over the top layer of noodles to ensure they are completely covered.
  22. Cover the dish tightly with aluminum foil and bake for 1 hour.
  23. Remove foil, sprinkle with the remaining 1/2 cup of mozzarella cheese.
  24. Bake uncovered for an additional 5 minutes until the cheese is bubbly and slightly golden.
  25. Cover loosely with foil again and let stand for 15 minutes before slicing to allow layers to set.
