Description

This comforting one-pot meal combines tender boneless chicken with the earthy depth of rehydrated black Chinese mushrooms and the sweet-salty kick of lap cheong sausage. The rice absorbs the rich flavors of ginger, chicken stock, and savory meats, creating a hearty and satisfying dish. It is perfect for busy weeknights or casual family dinners when you want something flavorful without a huge cleanup. The texture is moist yet distinct, with the chewiness of the sausage and mushrooms contrasting nicely with the fluffy rice. A reliable, home-style favorite that brings warmth and traditional Asian-inspired flavors to your everyday table.

Ingredients

Directions

  1. Soak the dried black Chinese mushrooms in warm water for 20 minutes until softened. Drain, rinse, and squeeze out excess water before setting aside.
  2. If using chicken stock granules, dissolve them in hot water to create the required amount of stock.
  3. Heat the oil in a large rice cooker pot or heavy-bottomed saucepan over medium heat.
  4. Add the sliced lap cheong sausage and ginger slices. Stir-fry for 2-3 minutes until fragrant and slightly browned.
  5. Add the bite-sized chicken chunks to the pan. Stir-fry for 4-5 minutes until the chicken is lightly seared on all sides.
  6. Add the washed and drained rice to the pan, stirring gently to coat the grains with the oil and aromatics.
  7. Pour in the chicken stock and add the soaked mushrooms. Stir well to combine all ingredients.
  8. Bring the mixture to a boil, then reduce heat to low. Cover tightly with a lid and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
  9. Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork before serving.
  10. Garnish with thinly sliced spring onions if desired, and serve hot.
