Ingredients

Directions

  1. Melt 2 tablespoons of butter in a large non-stick skillet over medium heat.
  2. Add sliced fresh mushrooms (approx. 4 cups) to the pan and sauté until tender and any released liquid has evaporated.
  3. Remove the cooked mushrooms from the pan and set aside on a plate.
  4. Melt the remaining 2 tablespoons of butter in the same skillet over medium-high heat.
  5. Pat the boned chicken breasts dry and season with salt and pepper.
  6. Place chicken breasts in the skillet and sauté on both sides until golden brown and cooked through, about 3-4 minutes per side.
  7. Remove the chicken from the pan and set aside with the mushrooms.
  8. Add the thin-sliced green onions to the skillet and sauté until tender, about 2 minutes.
  9. Pour in the water and white wine, scraping up any browned bits from the bottom of the pan.
  10. Stir in the chicken bouillon mix and bring the mixture to a boil.
  11. Reduce heat and simmer, stirring occasionally, until the liquid is reduced by half.
  12. Stir in the whipping cream and cook, stirring constantly, until the sauce is slightly thickened.
  13. Season the sauce with salt and pepper to taste.
  14. Return the chicken and mushrooms to the skillet, spooning the sauce over them.
  15. Warm the chicken through for 1-2 minutes and serve immediately.
