Description

This classic Chicken Supper Dish is the epitome of comfort food. It begins with stewing chicken simmered slowly with aromatic vegetables to create a rich, flavorful broth and incredibly tender meat. The dish is assembled as a layered casserole, alternating the shredded chicken with sliced hard-boiled eggs and mushrooms. A velvety white sauce, thickened with flour and enriched with light cream, binds everything together. Baked until hot and bubbly, it offers a savory, satisfying meal that feels both nostalgic and hearty. Perfect for family dinners or potlucks, this recipe transforms simple ingredients into a cohesive, delicious main course that warms the soul.

Ingredients

Directions

  1. Place the stewing chicken, hot water, peeled onion, celery tops, carrot, 1 tablespoon salt, and bay leaf in a large pot.
  2. Bring to a boil, then reduce heat and simmer gently until the chicken is fork-tender, about 2 1/2 to 3 hours.
  3. Remove the chicken from the pot and let it cool enough to handle; strain the broth through a fine-mesh sieve into a bowl, discarding the solids.
  4. Cut the meat from the chicken bones and shred or chop it into bite-sized pieces.
  5. Chill both the chicken meat and the strained broth separately in the refrigerator to firm up the fat and make handling easier.
  6. Preheat your oven to 350F (175C) and grease a 1.5-quart casserole dish.
  7. Arrange one-third of the chicken meat in the bottom of the casserole dish.
  8. Layer one-third of the sliced hard-boiled eggs and one-third of the drained mushrooms over the chicken.
  9. Repeat the layers two more times, ending with a layer of mushrooms on top.
  10. In a small bowl, mix the flour with 1/4 cup of the chilled chicken broth until smooth and free of lumps.
  11. In a saucepan, heat the remaining chicken broth combined with the light cream over medium heat.
  12. Stir the flour mixture into the hot broth and cream mixture.
  13. Cook the sauce, stirring constantly, until it thickens and becomes smooth.
  14. Stir in the remaining 1 teaspoon salt and 1/8 teaspoon pepper.
  15. Pour the creamy sauce evenly over the layered chicken, eggs, and mushrooms in the casserole dish.
  16. Bake uncovered in the preheated oven for 35 minutes, or until the dish is heated through and the sauce is bubbly.
