This hearty Chili Appreciation Society International Chili is a robust, American-style dish that balances deep savory notes with a subtle beer bitterness. Cubed chuck beef braises slowly until fork-tender, absorbing the flavors of cumin, garlic, and paprika. The addition of masa harina creates a uniquely thick, velvety texture that sets this chili apart from standard tomato-heavy versions. Fresh jalapeños provide a bright, spicy contrast to the rich meat. ItâÂÂs the perfect comfort food for cold evenings, tailgates, or a satisfying weekend dinner that tastes even better the next day. Serve with cornbread and ice-cold beer.

Ingredients

Directions

  1. Cut 2 pounds of chuck beef into stew-sized cubes.
  2. Chop 1 medium onion and slice 4 jalapeños in half after removing stems and seeds.
  3. Heat 2 tablespoons of suet or vegetable oil in a large heavy pot over medium-high heat.
  4. Brown the beef cubes and chopped onion in the fat, stirring occasionally, until well-seared.
  5. Add the jalapeño halves, 8 oz tomato sauce, 12 oz beer, 16 oz beef stock, 1 tablespoon ground cumin, 2 teaspoons garlic powder, 1 teaspoon ground pepper, and half of the 4 tablespoons chili powder.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 2 hours, or until the meat is tender.
  7. In a small bowl, mix 1/4 cup masa with 1 cup water to form a smooth paste.
  8. Stir the masa paste quickly into the simmering chili to thicken it.
  9. Add 1 tablespoon paprika and the remaining 2 tablespoons of chili powder.
  10. Continue cooking uncovered for 15 minutes to allow the flavors to meld.
  11. Remove the whole jalapeño halves before serving.
