Description

This classic American chili offers a robust and comforting experience, perfect for chilly evenings or gathering with friends. The dish centers on boneless chuck beef, which breaks down into tender morsels during a long, slow simmer. A unique twist comes from the addition of unsweetened cocoa powder, which adds a subtle earthy depth and richness without making it taste like dessert. Dried hot chile peppers provide a customizable kick of heat, while cumin and oregano bring warm, aromatic spice notes. The result is a thick, hearty stew with complex layers of flavor. It pairs beautifully with sour cream, cheese, and tortilla chips, making it an ideal meal for casual dinners or potlucks where you want to serve something truly satisfying.

Ingredients

Directions

  1. Heat a griddle or cast-iron skillet over medium-high heat.
  2. Toast the dried chile peppers, turning them frequently to prevent burning, for 1 to 2 minutes.
  3. Let the chile peppers cool until they can be handled, then remove the seeds.
  4. Combine the seeded peppers with 1 cup of water in a small saucepan.
  5. Bring the mixture to a boil, cover, and simmer for 5 minutes.
  6. Puree the peppers and water in a food processor until smooth.
  7. In a large casserole or Dutch oven, sauté the boneless chuck in 4 tablespoons of beef suet over moderately high heat until lightly browned.
  8. Transfer the browned meat to a bowl and set aside.
  9. Add the remaining suet, chopped onions, and garlic cloves to the casserole.
  10. Cook the mixture over moderate heat, stirring occasionally, until the onions are softened.
  11. Add the cumin and cook, stirring, for 1 minute to release its aroma.
  12. Return the chuck meat to the pot.
  13. Add the chile puree, drained tomatoes, unsweetened cocoa powder, bay leaf, and oregano.
  14. Stir to combine all ingredients thoroughly.
  15. Add enough water to barely cover the meat.
  16. Bring the chili to a boil, then reduce heat to low.
  17. Cover and simmer for 2 hours, stirring occasionally and adding more water if necessary to keep the meat submerged.
  18. Add salt to taste and simmer uncovered for another hour to thicken the sauce.
  19. Discard the bay leaf before serving.
  20. Transfer the chili to a heated serving bowl.
  21. Serve with sour cream, grated cheddar cheese, chopped onions, additional chile peppers, beans, and tortilla chips.
