  1. Cut the boneless pork into strips approximately 3/4 inch thick.
  2. Place the pork strips in a large bowl.
  3. In a small bowl, whisk together 2 tablespoons soy sauce, 1/4 cup dressing, and 3 teaspoons cornstarch.
  4. Pour the marinade over the pork, tossing to coat evenly. Let stand for 15 minutes.
  5. Heat 4 tablespoons salad oil in a wok or large skillet over high heat.
  6. Drain the pork, reserving the marinade for later use.
  7. Add the drained pork to the hot wok. Stir-fry for 4-5 minutes until the meat is cooked through and lightly browned.
  8. Remove the cooked pork from the wok and set aside on a plate.
  9. Drain any excess fat from the wok, leaving about 1 tablespoon of oil.
  10. Add the thawed frozen pea pods to the wok. Stir-fry for about 30 seconds.
  11. Add 2 tablespoons water to the wok, cover, and steam the peas for 30 seconds until crisp-tender.
  12. Return the cooked pork to the wok and add the sliced apricots.
  13. In a small bowl, dissolve the remaining 1 teaspoon cornstarch in the reserved apricot syrup.
  14. Stir the reserved pork marinade into the apricot syrup mixture.
  15. Pour the sauce mixture into the wok. Stir constantly and heat until the sauce thickens and coats the ingredients.
