  1. Preheat oven to 325&# 194;°F (165°C).
  2. Melt 3/4 cup butter and 3 oz unsweetened chocolate together in a saucepan or microwave.
  3. Stir in 1 1/2 cups sugar until well combined.
  4. Allow the mixture to cool slightly.
  5. Beat in 3 eggs, one at a time, ensuring each is fully incorporated before adding the next.
  6. Stir in 1 1/4 cups flour and 1 1/2 teaspoons vanilla extract until the batter is smooth.
  7. Spread the batter evenly into a greased 9x13 inch baking pan lined with foil, leaving a rim around the edges.
  8. Bake for 15-20 minutes, or until the edges are set and a toothpick inserted comes out clean.
  9. Remove from oven and let cool in the pan for 10 minutes.
  10. While the base cools, gently heat 3/4 cup apricot jam in a small saucepan until spreadable.
  11. Spread the warm apricot jam evenly over the baked chocolate base.
  12. Allow the bar to cool completely in the pan.
  13. Once cool, lift the entire bar out of the pan using the foil and place it on a cutting board.
  14. Cut the bar horizontally into two even layers.
  15. Melt 2 oz semi-sweet chocolate.
  16. Place the bottom layer (cut side up) on a serving platter and spread the melted chocolate over it.
  17. Place the top layer (jam side down) on top of the chocolate-coated bottom layer.
  18. Drizzle the remaining melted chocolate over the top and sides of the stacked bars.
  19. Let the chocolate set slightly, then cut into rectangular bars.
  20. Store in an airtight container in the refrigerator.
