This Chocolate Apricot Upside-Down Cake is a delightful fusion of rich, moist chocolate cake and the bright, tart sweetness of caramelized apricots. The cake begins with a luscious base of melted butter, brown sugar, and chopped pecans, creating a sticky, nutty caramel layer. Canned apricot halves are arranged cut-side down to ensure they stay in place during baking, infusing the chocolate batter with their fruity essence as it rises. The resulting cake is tender and fudgy, with a glossy, amber-hued fruit topping that contrasts beautifully with the deep cocoa flavor. Its an elegant yet simple dessert that feels special enough for holiday gatherings or Sunday brunches, yet easy enough for a spontaneous treat. Serve it slightly warm with a dollop of whipped cream to enhance the comforting, home-style appeal.

Ingredients

Directions

  1. Preheat oven to 375F (190C).
  2. Place 1/4 cup butter in a 9-inch round or square baking pan and place in the oven until melted, about 5-7 minutes.
  3. Carefully remove the pan from the oven. Add the brown sugar and mix well with a spoon to combine.
  4. Sprinkle the chopped pecans evenly over the butter-sugar mixture.
  5. Drain the canned apricot halves. Arrange them in the pan with the rounded side facing down, covering the bottom of the pan.
  6. In a small bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  7. In a large bowl, beat the 1/2 cup softened butter and granulated sugar together until light and fluffy.
  8. Add the eggs one at a time, beating well after each addition.
  9. Add the flour mixture alternately with the milk and vanilla extract, beginning and ending with the flour mixture. Beat until just blended.
  10. Pour or spread the batter evenly over the apricots in the pan.
  11. Bake for 40 to 45 minutes, or until a wooden pick inserted into the center of the cake comes out clean.
  12. Let the cake cool in the pan on a wire rack for 5 minutes.
  13. Place a serving plate upside down over the pan. Carefully invert the pan and plate together to release the cake.
  14. Serve slightly warm or at room temperature, optionally topped with whipped cream.
