  1. Preheat oven to 300 degrees F (150 degrees C).
  2. Lightly spray a 9x3 inch springform pan with nonstick cooking spray.
  3. Sprinkle the crushed chocolate wafer crumbs evenly over the bottom of the prepared pan to form a crust.
  4. In a medium bowl, beat the thick yogurt and softened Neufchatel cheese on medium speed until completely smooth and creamy.
  5. Add the skim milk, all-purpose flour, vanilla, and egg whites (or cholesterol-free egg product) to the cheese mixture.
  6. Beat on medium speed for about 2 minutes, scraping down the sides as needed, until the batter is smooth.
  7. Measure out 1 cup of the vanilla batter and transfer it to a small separate bowl.
  8. Beat the cocoa and chocolate extract into the small bowl of batter until fully blended and no lumps remain.
  9. Carefully pour the remaining vanilla batter over the wafer crumbs in the springform pan, spreading it out evenly.
  10. Drop spoonfuls of the chocolate batter randomly on top of the vanilla batter.

  21. Remove the topping from heat and let it cool slightly.
  22. Spread the raspberry topping over the cooled cheesecake.
  23. Cover the cheesecake and refrigerate for at least 3 hours, or until fully set and chilled.
