  2. Sprinkle the crushed chocolate wafer crumbs evenly over the bottom of the prepared pan.

  4. Add 2/3 cup of the granulated sugar, skim milk, flour, vanilla extract, and egg whites to the bowl.
  5. Beat on medium speed for about 2 minutes, or until the batter is smooth and well combined.
  6. Reserve about 1/3 of the vanilla batter in a separate small bowl.
  7. To the reserved batter, beat in the unsweetened cocoa powder and chocolate extract until fully blended and smooth.
  8. Pour the remaining vanilla batter into the springform pan over the crumb crust, spreading it evenly.
  9. Drop spoonfuls of the chocolate batter over the top of the vanilla batter.
  10. Use a metal spatula to gently swirl the chocolate and vanilla batters together, creating a marbled pattern, being careful not to scrape the bottom crust.
  11. Bake in the preheated oven for 1 hour.
  12. Turn off the oven but leave the cheesecake inside with the door closed for 30 minutes to cool gradually and prevent cracking.

  19. Remove from heat and let the raspberry topping cool completely.
  20. Strain the raspberry topping to remove seeds, if desired.
