Description

Indulge in these decadent Chocolate Toffee squares, a classic confection that balances rich cocoa with buttery sweetness. Made by simmering sugar, corn syrup, and half-and-half to a precise consistency, then folding in melted unsweetened chocolate, this treat offers a dense, fudgy texture rather than a hard candy snap. It&# 226;ÂÂs the perfect homemade gift or holiday dessert, reminiscent of old-fashioned confectionery shops. Simple ingredients come together to create a luxurious bite that pairs beautifully with coffee or tea. Easy to make in one pan, these squares are a surefire crowd-pleaser for any sweet tooth.

Ingredients

Directions

  1. Combine sugar, corn syrup, and 1/2 cup of the half-and-half in a large heavy-bottomed saucepan.
  2. Place over moderate heat and stir constantly until the sugar dissolves completely.
  3. Attach a candy thermometer to the side of the pan, then reduce heat to low.
  4. Cook the mixture, stirring frequently, until the thermometer registers 238ðF (114ðC) (soft-ball stage).
  5. Carefully blend in another 1/2 cup of half-and-half; the temperature will drop.
  6. Continue cooking and stirring until the thermometer reaches 236ðF (113ðC) or until a drop forms a soft, pliable ball in cold water.
  7. Mix in the remaining 1/2 cup of half-and-half and the melted unsweetened chocolate.
  8. Cook the toffee, stirring constantly to prevent scorching, until the mixture becomes quite thick and firms up quickly in cold water.
  9. Remove the pan from heat immediately once the consistency is right.
  10. Quickly stir in vanilla extract and salt (if using).
  11. Pour the hot toffee into a well-buttered 8-by-8-inch pan.
  12. Allow the toffee to cool completely at room temperature before cutting into 1-inch squares.
  13. Wrap individual squares in waxed paper or plastic wrap for storage.
