Ingredients

Directions

  1. Preheat oven to 325ðF (163ðC).
  2. Cut pork spareribs between the bones into individual pieces and season generously with salt and pepper.
  3. In a large skillet, heat oil over medium-high heat and brown the ribs on all sides. Remove ribs and set aside.
  4. In the same skillet, add chopped bacon, minced garlic, and chopped onion. Sauté until the onion is golden and bacon is crisp.
  5. Stir in the drained sauerkraut, sliced carrots, and caraway seeds, cooking for a few minutes to combine flavors.
  6. In a large baking dish or casserole, spread half of the sauerkraut mixture on the bottom.
  7. Arrange half of the browned ribs, quartered red potatoes, and sliced kielbasa over the sauerkraut layer.
  8. Spoon the remaining sauerkraut mixture over the meat and vegetables, then top with the remaining ribs.
  9. Pour the chicken broth and dry white wine evenly over the top.
  10. Cover the dish tightly with foil and bake for 2 to 3 hours, until the ribs are tender and the flavors have melded.
  11. Remove from oven, let rest for 10 minutes before serving with dark rye bread.
