Ingredients

Directions

  1. In a medium saucepan, combine butter, 1 tablespoon of sugar, 1/2 teaspoon salt, and 1 cup water. Heat over medium-high heat until the mixture comes to a rolling boil.
  2. Remove the pan from the heat. Immediately add the white cornmeal and flour all at once. Stir vigorously with a wooden spoon.
  3. Return the pan to low heat. Cook the mixture, stirring constantly, for about 1 minute until the dough forms a cohesive ball and pulls away from the sides of the pan.
  4. Remove from heat. Beat in the eggs one at a time, mixing vigorously after each addition until the dough is smooth, glossy, and homogeneous.
  5. Transfer the dough into a pastry bag fitted with a large star tip (such as a #806 tip).
  6. In a shallow bowl or a large zip-top bag, mix the remaining 1 cup of sugar with the cinnamon.
  7. Heat 3 inches of salad oil in a deep heavy skillet or Dutch oven to 375&# 194;°F (190ðC).
  8. Pipe 5-inch lengths of dough directly into the hot oil. Do not overcrowd the pan.
  9. Fry the churros for about 1 1/2 minutes per side, turning occasionally, until they are evenly golden brown and crispy.
  10. Using a slotted spoon, remove the churros from the oil and drain briefly on paper towels.
  11. While the churros are still hot, place them in the bag with the cinnamon-sugar mixture and shake gently to coat evenly.
  12. Serve immediately while warm and crispy.
