  1. Bring a large pot of salted water (about 6 quarts) to a rolling boil.
  2. In a large bowl, combine flour, ricotta, smoked ricotta, eggs, salt, currants, grated bitter chocolate, nutmeg, lemon zest, sliced scallions, and chopped parsley.
  3. Mix with your hands until a soft, cohesive dough forms.
  4. Divide the dough into 4 equal portions.
  5. On a floured surface, roll each portion into a long rope or dowel, approximately 1-inch thick.
  6. Flatten the ropes slightly and cut into small pieces, each about 1 1/2 inches long.
