Description

These Coffee Cake Muffins offer the best of both worlds: the tender, moist crumb of a classic muffin paired with the rich, buttery crunch of a coffee cake topping. The secret lies in the generous streusel layer, made with pecans, brown sugar, and warm spices like cinnamon and nutmeg. Perfect for a weekend brunch, a cozy morning coffee break, or as an impressive homemade gift. While they taste indulgent, they are surprisingly simple to mix up using standard pantry staples. The subtle spice notes complement the sweetness beautifully, making these muffins a crowd-pleaser that disappears quickly from the cooling rack.

Ingredients

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease 12 muffin pan cups or line them with paper liners, then set aside.
  2. In a small bowl, mix together the finely chopped pecans, firmly packed light brown sugar, 1 tablespoon of flour, cinnamon, nutmeg, and melted butter (or margarine) until the mixture resembles coarse crumbs. Set this streusel topping aside.
  3. In a medium bowl, sift together 1 1/2 cups of all-purpose flour, granulated sugar, baking powder, and salt.
  4. Using a pastry cutter or two forks, cut 1/4 cup of vegetable shortening into the dry ingredients until the mixture resembles coarse meal.
  5. In a small separate bowl, beat the egg and then blend in the milk until well combined.
  6. Add the milk-egg mixture to the dry ingredients along with half of the prepared pecan streusel. Stir gently with a spoon just until the dry ingredients are moistened; do not overmix. The batter should be lumpy.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Sprinkle the remaining pecan streusel mixture evenly over the top of each muffin. Garnish each muffin with a whole pecan half if desired.
  9. Bake in the preheated oven for 15 to 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow muffins to cool in the pan for 5 minutes, then remove them to a wire rack to cool completely before serving.
