Ingredients

Directions

  1. Fill the bottom chamber of the stovetop espresso maker with cold water up to the indicated level for your desired number of cups.
  2. Ensure the safety valve hole is not obstructed by water.
  3. Fill the brew basket to the rim with finely ground coffee, leveling it off without tamping down.
  4. Adjust the reducer in the brew basket according to the number of cups: remove it for 9 cups, place long stem down for 3 cups, or short stem down for 6 cups.
  5. Wipe any excess coffee grounds from the brew basket rim and the o-ring to ensure a tight seal.
  6. Screw the top chamber onto the bottom chamber, tightening the knob as much as possible by hand.
  7. Close the steam valve on the top chamber.
  8. Place the assembled maker on a stove burner set to medium-high heat and position a carafe or mugs under the spout.
  9. Wait for the coffee to begin dripping; it will start slowly and appear very dark.
  10. As pressure builds, the stream will become strong and steady, and the coffee color will lighten to a rich brown.
  11. When the flow becomes noisy and sputters, indicating the water is boiling off, remove the maker from the heat immediately.
  12. For a cappuccino, keep the steam valve closed until pressure builds, then open it to steam milk or cream in a separate container until frothy.
  13. Serve the espresso immediately, pouring over frothed milk if making cappuccinos.
