Ingredients

Directions

  1. Combine 1 tablespoon of taco seasoning, 1/2 cup of salsa, and 1/8 cup of warm water with 32 oz of refried beans in a bowl.
  2. Stir the mixture until smooth and well-blended.
  3. Spread the seasoned bean mixture evenly into the bottom of a 9x13 glass baking dish or two pie plates.
  4. Set aside 2-3 tablespoons of sour cream for the avocado layer.
  5. Mix the remaining 1 tablespoon of taco seasoning into the rest of the sour cream.
  6. Spread the seasoned sour cream evenly over the bean layer.
  7. In a separate bowl, mash 2 peeled avocados (seeds removed) until smooth.
  8. Stir the remaining 1/2 cup of salsa and the reserved 2-3 tablespoons of sour cream into the mashed avocados.
  9. Spread the avocado mixture gently over the sour cream layer, taking care not to mix the layers.
  10. Mix 1 1/2 cups of grated cheddar cheese and 1 1/4 cups of grated Jack cheese together.

  12. Scatter chopped tomatoes, chopped black olives, and sliced green onions over the top.
  13. Cover and chill in the refrigerator for at least 2 hours before serving.
  14. Serve with sturdy, round restaurant-style tortilla chips that will not break when dipping.
