  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the chicken breast pieces and brown them on all sides until cooked through.
  3. Add chopped onions, crushed garlic, sliced celery, sliced carrots, and sliced green pepper to the pot.

  7. If using soaked garbanzo beans, add them now. If using canned beans, reserve them for later.
  8. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 40 minutes.
  9. If using canned garbanzo beans, drain, rinse, and add them to the pot during the last 10-15 minutes of cooking.
  10. Season with salt and pepper to taste before serving.
