Directions
-
Preheat your oven to 350F (175C).
-
In a small bowl, combine the crushed Ritz crackers and melted butter until the mixture resembles wet sand.
-
Press the cracker mixture firmly into the bottom of a 9-inch springform pan to create an even crust.
-
Bake the crust for 10 minutes, then remove from the oven and allow it to cool slightly.
-
Reduce the oven temperature to 325F (165C).
-
In a large mixing bowl, beat the softened cream cheese, eggs, and 1/4 cup of sour cream with an electric mixer until smooth and fluffy.
-
Stir in the fresh lemon juice, grated onion, Old Bay seasoning, Tabasco sauce, and fresh ground pepper.
-
Gently fold in the lump crabmeat, being careful not to break up the large chunks.
-
Pour the filling over the cooled crust and spread evenly.
-
Bake for 50 minutes, or until the edges are set but the center still has a slight jiggle.
-
Remove from the oven and immediately run a thin knife around the edge of the pan to loosen the cheesecake.
-
Let the cheesecake cool completely on a wire rack at room temperature.
-
Once cool, release the sides of the springform pan.
-
Spread the remaining 1/2 cup of sour cream over the top of the cheesecake before serving.
