Description

This Creamy Brussels Sprouts Casserole transforms humble vegetables into a luxurious side dish that rivals any main course. Fresh Brussels sprouts are gently steamed until tender, then tossed in a velvety mixture of sour cream, lemon juice, and fresh parsley for a bright, tangy contrast to the earthy greens. The addition of pimento-stuffed olives adds a surprising savory depth and pop of color. Topped with a buttery breadcrumb crust, the casserole bakes until golden brown and bubbling, creating a delightful textural contrast between the crisp topping and the soft interior. It is an elegant yet comforting choice for holiday gatherings, Sunday suppers, or whenever you want to elevate a standard vegetable dish into something truly special.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. Wash Brussels sprouts, trim the ends, and cut a small X into the bottom of each sprout to help them cook evenly.
  3. Bring a large pot of salted water to a boil. Add the sprouts and boil for 5-7 minutes until just tender. Drain thoroughly and transfer to a large bowl; cover with ice water to stop cooking, then drain again.
  4. Heat 2 tablespoons of butter in a large skillet over medium heat.
  5. Add the drained Brussels sprouts to the skillet. Stir to coat in butter, cover, and steam for about 10 minutes, shaking the skillet occasionally, until tender.
  6. Stir in the lemon juice and continue to steam for 2 more minutes. Remove from heat.
  7. Fold in the sour cream, minced parsley, salt, and pepper. Mix well until the sprouts are evenly coated. Heat gently through but do not allow to boil.
  8. Transfer the mixture to an 8x8 inch baking dish.
  9. Sprinkle the sliced olives over the top, followed by the bread crumbs.
  10. Melt the remaining 2 tablespoons of butter and drizzle evenly over the bread crumbs.
  11. Bake for 20 to 25 minutes, or until the topping is lightly browned and the casserole is bubbly.
