  1. Drain the canned salmon, reserving the juice, and flake the fish into a bowl.
  2. In a microwave-safe bowl, combine the reserved salmon juice, chopped shallots, chopped onion, vegetable stock, and dry white wine.
  3. Microwave the vegetable mixture on HIGH for 10 minutes, then let it stand for 15 minutes to soften the vegetables.
  4. In a separate microwave-safe bowl, melt the butter on HIGH for 30 seconds.
  5. Stir the plain flour into the melted butter and microwave on HIGH for 30 seconds to cook the raw flour taste out.
  6. Gradually add the skimmed milk to the butter-flour mixture, whisking well after each addition and microwaving on HIGH for 1 minute between additions until thickened.
  7. Add the cooked vegetable mixture, flaked salmon, curd cheese, and Greek yogurt to the creamy milk base.
  8. Season with salt and pepper to taste.
  9. Transfer the mixture to a blender and puree until completely smooth and creamy.
