Ingredients

Directions

  1. Preheat your oven to 375ðF (190ðC).
  2. Season the pork chops evenly with cayenne pepper, paprika, and 1 1/2 teaspoons of salt.
  3. Heat vegetable oil in a large Dutch oven or oven-safe skillet over medium-high heat.
  4. Brown the seasoned pork chops on both sides until golden; remove them from the skillet and set aside.
  5. Add sliced onions and green bell peppers to the same skillet; sauté until softened, about 5 minutes.
  6. Stir in the uncooked rice and cook for 2-3 minutes until lightly toasted.
  7. Add the corn, water, 1 teaspoon of salt, and black pepper to the skillet; stir well to combine.
  8. Arrange the browned pork chops on top of the rice and vegetable mixture.
  9. Bring the liquid to a boil, then cover the skillet tightly with a lid.
  10. Transfer the skillet to the preheated oven and bake for 25 minutes.
  11. Remove from oven, carefully insert tomato slices between each pork chop, and cover again.
  12. Return to the oven and bake for an additional 10 minutes, until the pork is cooked through and rice is tender.
  13. Let stand for 5 minutes before serving to allow the rice to finish absorbing the liquid.
