  1. Heat 1 tablespoon of peanut oil in a large skillet over medium-high heat.
  2. Season pork chops with salt and pepper, then brown them on both sides until golden.
  3. Remove chops from the skillet and set aside on a plate.
  4. Drain excess fat from the skillet, leaving about 1 tablespoon of oil.
  5. Add sliced onions and minced garlic to the skillet and saut for 3 minutes until softened.
  6. Add chopped green pepper and saut for 1 minute.
  7. Pour in white wine, scraping up any browned bits from the bottom of the pan.
  8. Return the pork chops to the skillet and spoon the wine mixture over them.
  9. Add tomatoes, lemon juice, Worcestershire sauce, Cajun seasoning, and bay leaf.
  10. Add enough water to almost cover the chops if necessary.
  11. Bring to a boil, then reduce heat to low and cover.

  14. Discard the bay leaf.
  15. Increase heat to high and boil the sauce, stirring frequently, until thickened to desired consistency.
