Directions
-
Sort through the dried black beans, removing any stones or debris, then rinse thoroughly under cold water.
-
Place the rinsed beans in a large bowl and cover with several inches of water; let soak overnight.
-
The next day, drain and rinse the soaked beans.
-
In a large skillet over medium-high heat, brown the lean bulk pork sausage, breaking it up as it cooks; drain excess grease.
-
Add the cubed pork, stew beef chunks, and smoked link sausage to the skillet and brown on all sides.
-
Add the diced ham, bell pepper, onions, celery, and garlic to the skillet; saut for 5 minutes until vegetables begin to soften.
-
Transfer all the meat and vegetable mixture to the crockpot.
-
Add the soaked beans and their soaking liquid to the crockpot.
-
Crumble the beef bouillon cubes into the pot and add the oregano, basil, cumin, bay leaves, cloves, and parsley.
-
Add enough additional water to cover all ingredients by at least two inches.
-
Season with salt and pepper to taste.
-
Cover and cook on HIGH for 3 hours, then reduce heat to LOW and cook for an additional 6 to 7 hours.
-
Stir occasionally during cooking; add more water if the mixture becomes too thick.
-
If the stew is too thin, remove about 1/2 cup of beans, mash them with a fork into a paste, and stir back into the pot to thicken.
-
About one hour before serving, stir in the vinegar and Tabasco sauce.
-
Taste and adjust seasoning with more salt, pepper, or vinegar if needed.
-
Serve hot over rice.
