  1. Peel the potatoes and boil them in water until tender. Drain well and rub through a colander or sieve to create a smooth, fine mash.
  2. While the potato mash is still warm, add the water. Ensure the mixture is just warm enough to bear your hand in it comfortably, not hot.
  3. Dissolve the yeast and salt into the warm potato-water mixture. Stir gently to combine.
  4. Gradually stir in flour to create a moist, thick paste. The consistency should be similar to a soft dough.
  5. Beat the paste vigorously in a deep bowl until smooth. Ensure no dry flour remains on the sides.
  6. Cover the bowl with a clean cloth and place in a warm spot to rise. Allow it to double in size and become light and spongy.
  7. For Muffins: Turn the risen dough out onto a floured surface. Divide into pieces weighing about 3 oz each.
  8. Roll each piece into a round shape. Place them on a floured wooden tray to prove (rise) again until light.
  9. Heat a griddle or hot plate. Carefully transfer the muffins one by one to the hot surface using a thin spatula, taking care not to deflate them.
  10. Cook the muffins on one side until golden brown, then turn over with the spatula to cook the other side.
  11. Once cooked, brush off excess flour and let the muffins cool on a clean cloth or sieve.
  12. For Crumpets: Return to the risen dough. Stir in only half the quantity of flour used for the muffins to create a thinner batter.

  15. Heat a griddle and grease crumpet rings with a little fat. Place the rings on the griddle.
  16. Pour the batter into the rings. Cook until bubbles form on the surface and the bottom is golden.
  17. Flip the crumpets with a palette knife and cook the other side until done. Remove and cool on a cloth.
