  2. Rub the boiled potatoes through a colander into a large bowl to create a smooth mash.
  3. Dissolve the yeast and salt in the water, ensuring the water is warm but not hot enough to scald the yeast.
  4. Gradually stir flour into the potato mixture and yeast water to form a moist, thick paste.
  5. Beat the mixture vigorously in a deep bowl until smooth, then cover with a clean cloth and let rise in a warm place until light and spongy.
  6. For Muffins: Turn the risen dough out onto a floured surface and divide into 3-ounce pieces.
  7. Roll each piece into a round shape and place on a floured tray to prove until light.
  8. Heat a griddle or hotplate until quite hot.
  9. Carefully transfer the proved muffins to the hot griddle using a thin slice of tin, avoiding knocking out the air.
  10. Cook the muffins slowly, turning with a palette knife when the first side is browned, until cooked through.
