Ingredients

Directions

  1. In a small bowl, combine 1 teaspoon curry powder, 1/4 teaspoon salt, and a pinch of black pepper.
  2. Remove skin from 2 boned chicken breast halves and rub the curry mixture evenly over both sides.
  3. In an 8-inch skillet, combine the remaining 1/4 teaspoon salt, 2/3 cup orange juice, 2/3 cup water, 1/2 cup raw converted rice, 1 teaspoon brown sugar, and 1/2 teaspoon dry mustard.
  4. Place the skillet over medium-high heat and bring the liquid mixture to a boil, stirring occasionally.
  5. Arrange the seasoned chicken breasts on top of the rice mixture in the skillet.
  6. Cover the skillet tightly with a lid and reduce heat to low to simmer for 20 minutes.
  7. Remove the skillet from heat and let it stand, still covered, for 5 minutes to allow the liquid to be fully absorbed by the rice.
  8. Sprinkle with 1 tablespoon chopped parsley before serving.
