Ingredients

Directions

  1. Rinse the lentils thoroughly in several changes of cold water until the water runs clear.
  2. In a medium pot, combine the rinsed lentils with 4 cups of water, 2 whole dried chiles, 1/4 teaspoon turmeric, and 1/2 teaspoon salt.
  3. Bring the mixture to a boil over high heat, then reduce the heat to low to maintain a gentle simmer.
  4. Simmer uncovered, stirring occasionally, until the lentils are very tender. This takes about 30 minutes for red lentils, 45 minutes for green split peas, or up to an hour for mung beans.
  5. Add more water, 1/2 cup at a time, if the pot becomes too dry, but keep the final consistency fairly thick and creamy.
  6. While the lentils cook, heat 2 tablespoons of vegetable oil in a small skillet over medium heat.
  7. Add 1/2 teaspoon cumin seeds to the hot oil and cook for 10 to 15 seconds until they sizzle and become fragrant.
  8. Stir in 1 cup chopped onions and 1 teaspoon grated fresh ginger.
  9. Sauté the onion and ginger mixture, stirring frequently, until the onions begin to brown and soften, about 5 to 10 minutes.
  10. Once the lentils are tender, remove and discard the whole dried chiles from the pot.
  11. Stir the sautéed onion mixture, 1 tablespoon fresh lemon juice, and 1 teaspoon garam masala (if using) into the cooked lentils.
  12. Taste and adjust salt as needed, then simmer for another minute to blend the flavors.
  13. Serve hot, sprinkling additional garam masala on top if desired.
  14. For Spinach Dal variation: Add 4 cups chopped fresh spinach to the sautéed onions after 5 minutes and cook for 5 more minutes before adding to the lentils.
  15. For Tomato Dal variation: Add 1 cup chopped tomatoes to the sautéed onions after 5 minutes and cook for 5 more minutes before adding to the lentils.
  16. For Spinach-Tomato Dal: Add both spinach and tomatoes to the onions as described in the previous variations.
