Description

This classic Danish pastry dough is the foundation for countless sweet treats, offering a tender, flaky texture that melts in your mouth. The rich butter layers create a delicate, airy crumb that holds up beautifully to jams, custards, or fruit fillings. While the process requires patience and precision, the result is a professional-quality pastry that rivals any bakery. It is best prepared ahead of time to allow the dough to rest and chill properly, ensuring the butter layers remain distinct. Perfect for weekend brunches, holiday mornings, or as a special treat for guests who appreciate traditional European baking.

Ingredients

Directions

  1. Heat the milk to lukewarm, approximately 105&# 194;°F (40ðC).
  2. Remove milk from heat, pour into a bowl, and whisk in the yeast until dissolved.
  3. Let the mixture stand for 5-10 minutes until foamy, then set aside.
  4. In a food processor fitted with a metal blade, combine flour, sugar, and salt. Pulse to mix.
  5. Add the cold butter (cut into small cubes) and pulse until the mixture resembles coarse crumbs.
  6. Add the eggs and the yeast-milk mixture. Pulse until the dough forms a cohesive ball.
  7. If the dough is too dry, add water one tablespoon at a time. If too wet, add flour one tablespoon at a time.
  8. Turn the dough out onto a lightly floured surface and knead briefly, about 30 seconds, just to form a smooth ball.
  9. Cover the dough with plastic wrap and let it rest at room temperature for 10 minutes.
  10. Prepare the butter block: Place cold butter between two sheets of parchment paper. Pound with a rolling pin to form a flat, malleable square, approximately 4x6 inches.
  11. Roll the rested dough into a 6x12 inch rectangle on a lightly floured surface.
  12. Place the butter block in the center of the dough rectangle.
  13. Fold the top third of the dough down over the butter, and the bottom third up over that, enclosing the butter completely (a letter fold).
  14. Turn the dough 90 degrees so the fold is on the left side.
  15. Roll the dough out into a long rectangle, approximately 6x18 inches.
  16. Fold the dough into thirds again (a letter fold). This completes the first turn.
  17. Wrap the dough tightly in plastic wrap and refrigerate for 30 minutes.
  18. Repeat the rolling and folding process two more times, chilling for 30 minutes between each turn.
  19. After the final turn, wrap the dough securely and refrigerate for at least 2 hours, or preferably overnight, before shaping.
