Description

These homemade dumplings offer a satisfying balance of textures and flavors, perfect for those monitoring their blood sugar. The filling combines lean ground round with fresh spinach and crunchy water chestnuts, creating a savory mix that is low in sugar but high in protein and fiber. The dough is simple all-purpose flour, kept minimal to manage carbohydrate intake. Pot-sticking and steaming the dumplings creates a crispy bottom and tender top, while the sherry and low-sodium soy sauce add depth without excess salt. Serve them warm with a light vinegar dipping sauce for a comforting, healthy dinner or lunch that feels indulgent yet responsible.

Ingredients

Directions

  1. In a large bowl, combine the flour and water. Mix until a shaggy dough forms, adding more water a teaspoon at a time if needed until the dough cleans the sides of the bowl.
  2. Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap tightly in plastic wrap and let rest for 20 minutes.
  3. While the dough rests, heat a skillet over medium-high heat. Add the ground round and cook until browned and drained of all excess fat. Transfer to a mixing bowl to cool slightly.
  4. If using fresh spinach, wash, dry, and chop it finely. If using frozen spinach, thaw and squeeze out all excess moisture thoroughly.
  5. To the cooled beef, add the spinach, water chestnuts, green onions, grated ginger, low-sodium soy sauce, and sherry. Mix well to combine all ingredients evenly.
  6. Once the dough has rested, cut it in half. Roll one half into a long, even rope about 1 inch in diameter on a floured surface.
  7. Cut the dough rope into 1-inch sections. Flatten each section with your palm or a small glass into a circle about 3 inches in diameter, keeping the edges slightly thinner than the center.
  8. Place 1 tablespoon of the meat filling in the center of each dough circle. Dip your finger in water and moisten the edge of the dough.
  9. Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, ensuring no air pockets remain. Repeat with remaining dough and filling.
  10. Heat a non-stick frying pan over medium heat. Brush with a small amount of oil (about 1/2 teaspoon).
  11. Arrange the dumplings in the pan in a single layer. Cook for 2-3 minutes until the bottoms are golden brown.
  12. Carefully add enough water or broth to the pan to come up about one-third of the height of the dumplings. Immediately cover the pan with a tight-fitting lid.
  13. Steam the dumplings for 10-15 minutes, or until the water has evaporated and the dough is cooked through.
  14. Remove the lid and let cook for another minute to crisp the bottoms slightly. Serve hot or cold with a dipping sauce of your choice.
