Ingredients

Directions

  1. Place dried chickpeas in a large bowl, cover with plenty of cold water, and stir in 1 tbsp bicarbonate of soda. Cover and leave to soak overnight until swollen.
  2. Drain and rinse the soaked chickpeas thoroughly. Place them in a large saucepan and add enough fresh water to cover by about 2 inches.
  3. Add the remaining 1/2 tbsp bicarbonate of soda to the saucepan. Bring the mixture to a boil over high heat.
  4. Reduce heat to maintain a gentle simmer. Skim off any foam or scum that rises to the surface during cooking.
  5. Cover the pan with the lid slightly askew to allow steam to escape, and simmer for about 1.5 hours, or until the chickpeas are very tender and creamy.
  6. Drain the cooked chickpeas well and rinse under cold water to remove any residual bicarbonate taste.
  7. In a food processor or blender, combine the cooked chickpeas, tahini, lemon juice, garlic, and cumin.
  8. Blend the mixture until smooth, scraping down the sides as needed. Add 4 tbsp water to help achieve a silky consistency.
  9. While the motor is running, drizzle in 2 tbsp olive oil and blend until fully incorporated and creamy.
  10. Taste and adjust seasoning with salt if desired. Serve immediately with warm pitta bread and fresh vegetables.
