Description

This simple dip features whole garlic cloves slowly cooked in olive oil until tender and fragrant. The result is a rich, savory condiment perfect for spreading on bread or serving as a side. It is a gluten-free and vegetarian option that highlights the natural sweetness of roasted garlic.

Ingredients

Directions

  1. Place the garlic cloves in a small pan.
  2. Pour in enough oil to completely cover them.
  3. Place the pan over a very low heat.
  4. If you have a thermometer, you want to keep the oil around 140°F (60°C) to gently cook the garlic without burning it.
  5. Cook the garlic slowly until it is soft and golden, approximately 20 minutes.
  6. Transfer the cloves and oil to a sterilised jar.
  7. Store in the fridge.
